Ingredients
- 4 large sweet potatoes
- 3–4 cups shredded rotisserie chicken
- 1 cup BBQ sauce
- 1 cup Cache Valley® shredded sharp cheddar
- Pickled red onions or sliced jalapeños
Steps
- Bake or microwave the sweet potatoes until fork-tender.
- Slice each sweet potato open lengthwise and gently press the ends to open it up.
- In a small bowl, combine the shredded chicken and BBQ sauce, stirring to coat.
- Divide the BBQ chicken mixture evenly among the sweet potatoes and top with cheese.
- Broil in the oven for 1–2 minutes or microwave for 30-60 seconds to melt the cheese.
- Garnish with pickled red onions or sliced jalapenos and serve.
