Ingredients
For the Taco Mac & Cheese
- 1 lb ground beef
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 2 cups elbow macaroni
- 3 cups beef broth
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1 cup milk

Steps
- Step 1: Brown the Beef – In a large Dutch oven or deep skillet over medium heat, cook the ground beef until browned. Add diced onion and cook for another 3–4 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant. Drain excess grease if needed.
- Step 2: Build the Flavor – Sprinkle taco seasoning over the beef mixture and stir well. Add Rotel tomatoes, beef broth, milk, and uncooked macaroni. Stir everything together. Bring to a gentle boil.
