Warm Colby Jack And Corn Dip recipe

Ingredients

  • 2 cups frozen or canned corn (drained if canned)
  • 1 ½ cups shredded Colby Jack cheese (plus extra for topping) from Cache Valley Creamery
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 green onions, thinly sliced
  • 1 small jalapeño, finely diced (optional, for heat)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ¼ tsp salt (to taste)
  • 2 tbsp chopped fresh cilantro (optional)
  • 1 tbsp lime juice

Steps

  • Preheat oven to 375°F.
  • Mix the base. In a large bowl, combine cream cheese, sour cream, and mayonnaise until smooth and creamy.
  • Add flavor. Stir in garlic powder, smoked paprika, salt, pepper, lime juice, green onions, and jalapeño if using.
  • Fold in the good stuff. Add corn and 1 ½ cups shredded Colby Jack cheese. Mix until evenly combined.
  • Bake it warm and bubbly. Spread mixture into a small baking dish or cast iron skillet. Top with extra Colby Jack cheese.
  • Bake for 20–25 minutes, or until hot, melted, and lightly golden on top. Finish and serve.
  • Top with cilantro and an extra squeeze of lime. Serve immediately while warm and gooey.

Tips for the Best Dip

Freshly shredded cheese melts better than pre-shredded.

Want it smokier? Add a pinch more smoked paprika or a dash of chipotle powder.
