Ingredients
- 1 lb ground beef
- ½ medium yellow onion, finely diced
- 2 cloves garlic, minced
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 8 oz cream cheese, softened
- ½ cup sour cream
- 2 cups shredded Cache Valley Creamery Sharp Cheddar Cheese, divided
- ¼ cup dill pickles, finely chopped
- 2 tablespoons pickle juice
- 4 slices bacon, cooked and crumbled, optional
For Topping
- ¼ cup diced dill pickles
- 2 tablespoons finely diced red onion
- 1 small Roma tomato, seeded and diced
- Crumbled bacon, optional
- Extra Cache Valley Creamery Sharp Cheddar
Steps
- Cook the beef. Preheat the oven to 375°F. In a large skillet over medium-high heat, cook the ground beef and diced onion for 6–8 minutes, breaking the beef into small crumbles. Drain excess grease.
- Build the burger flavor. Reduce the heat to medium. Add garlic, salt, pepper, Worcestershire sauce, ketchup, and mustard. Cook for another 1–2 minutes.
- Make it creamy. Reduce the heat to low and stir in the cream cheese until completely melted. Add the sour cream, chopped pickles, pickle juice, and 1½ cups Cache Valley Creamery Sharp Cheddar Cheese. Stir until everything is creamy and combined. Fold in the bacon if using.
- Make it cheesy. Transfer the mixture to an 8×8-inch baking dish or small cast-iron skillet. Sprinkle the remaining ½ cup Cache Valley Creamery Sharp Cheddar over the top.
- Bake. Bake uncovered for 12–15 minutes, until hot and bubbling around the edges. For an extra golden cheesy top, broil for 1–2 minutes at the end.
- Give it the full cheeseburger treatment. Let the dip cool for about 5 minutes, then top with diced pickles, red onion, tomato, bacon, and a little extra shredded cheese.
