Colby Jack Firecrackers

Ingredients

  • 12–15 Cache Valley® Colby Jack Cheese Sticks
  • 12–15 Large egg roll wrappers
  • 2 cups Corn
  • 1 can Black beans (rinsed and drained)
  • 1/2 cup Red onion, diced
  • 1 Jalapeño, diced
  • 1 tbsp Taco seasoning
  • Juice of 1/2 lime
  • 1 Egg (lightly beaten for sealing)
  • Cooking spray (Avocado or Olive oil spray works best for high heat)

Steps

  • Mix the Filling: In a medium bowl, combine the corn, black beans, red onion, jalapeño, taco seasoning, and lime juice.
  • Assemble: Place an egg roll wrapper in a diamond shape. Scoop 1/3 cup of the filling into the center and top with one Colby Jack stick.
  • Roll & Seal: Fold the bottom corner over, tuck in the sides firmly, and roll. Seal the final edge with the egg wash.
  • Prep for Heat: Place the firecrackers in the air fryer basket. Generously spray the tops with cooking spray—this is the secret to that golden, crispy exterior.
  • Air Fry: * Cook at 400°F for 5 minutes.
    o Flip the firecrackers over.
    o Spray the other side with cooking spray.
    o Cook for 5 more minutes until perfectly golden and crispy.
